Easy Arugula & Spinach Salad

This salad has become my go to when I am hungry but don’t want to cook an elaborate meal. It’s healthy and filling, that I almost make it too much. I haven’t gotten sick of it yet so I thought I’d share it with you before that ever happens. The great thing about this salad is that you can basically add your own favorite vegetables/fruit to it, as well as dressing. The combination I use is what I feel tastes best together. This salad is also meant to be preference based because I know everyone is different. 

Garden Fresh Spinach & Arugula Salad:

One salad bowl can feed around 3-4 people 

What you need: 

Combining the ingredients: 

  •  Wash your greens and add the amount you need to your bowl (I normally gauge and do about 1 cup each)
  • Cut up 1 whole cucumber or half of one
  • Dice up your grape tomatoes, I use around 4 just because I am not a huge tomato person 
  • You can either already buy cut up carrots or cut them on your own, either works. I prefer to cut them on my own because I like them thicker
  • Saving the tears for last.. cut up your onion. I personally will cut a lot because I’m an onion addict but I know some aren’t. Trader Joes and VONS also sell pre-cut onions to save you from the tears. (I buy them whole and cut at home because I feel that they’re more fresh and don’t go bad so quick)
  • Lastly, add your avocado. You can either  them up or have the in whole halves
  • Now add all the ingredients to the bowl and mix around with a spoon
  • Add dressing (however much you feel is needed)
  • Now that the dressing is added, mix in the croutons & Feta cheese
  • Now, enjoy!

*You can also add in chicken or egg if you’re wanting some protein*
