Whole30 Green Chili Stuffed Bell Peppers

If you follow me on Instagram you know that I decided to dive into the Whole30 diet last week. One of the hardest parts of this diet is figuring out what to make because you basically have to cook for every meal. I have been experimenting with some recipes using what I have in my fridge. These stuffed bell peppers has been one of my favorites so far. They’re super flavorful and filling (very hard to achieve on Whole30). It’s a simple and quick recipe as well, which makes it very useful after a long day of work. So if you want to jump on this health train with me I 100% recommend this recipe!

What you need: 

  • 1 lb ground turkey
  • 5 whole peppers
  • Trader Joes green chili’s
  • Trader Joes Hatch Valley Salsa (I didn’t measure amount just add as preferred)
  • 2 cloves of garlic
  • 1 cup cauliflower rice
  • Chosen Foods avocado oil
  • 1/2 tsb Pepper
  • 1/2 tsb Chili Powder
  • 1/2 White onion chopped
  • Trader Joes Chunky Spicy Guacamole

Mixing the meat: 

  1. Preheat your oven to 425
  2. Chop up the garlic cloves and onions (I buy pre-cut onions from to avoid the tears)
  3. Grab the garlic, onion, and avocado oil and add to a pan, let the garlic heat up a bit and then add the ground turkey
  4. While the ground turkey is cooking you can begin cutting the peppers
  5. Once the meat is mostly cooked through you can add your cauliflower rice, green chilies, salsa, pepper, and chili powder
  6. Stir them all together and let cook for about 5 minutes

Stuffing the pepper: 

  1. Once you have all your peppers cut and on a sheet pan, add some Avocado oil to the inside of the peppers to keep from sticking
  2. Now that the meat is cooked you can add it to the peppers. I took a spoonful and placed it in each pepper until full (makes it less messy)
  3. Once the meat is placed in the peppers, add to the oven and cook for 20 min
  4. The timer will go off and let them cool for a couple minutes
  5. Once cooled enough for you, add the guacamole and get to eating
