Chicken Enchilada Casserole

      Mexican food is one my favorites to eat and make. Now of course, nothing I make tastes as good as the authentic food but I give it my best. I have always loved enchiladas but the process of rolling them up annoyed me and prevented me from making them. That was until I stumbled upon a casserole recipe (seriously genius). I’ve taken this recipe and created my own little twist. Now, if you are trying to diet and eat better I would not recommend this recipe. If you aren’t counting calories this recipe is to die for.

Chicken Enchilada Casserole:

Feeds 4-6 people

What you need: 

  • 1lb chicken breast or 1 rotisserie chicken
  • Trader Joes Enchilada Sauce
  • 1/2 White onion
  • 1 can green chili’s
  • 1 can black beans
  • Sour cream
  • Shredded Three cheese Blend
  • 12 corn tortillas
  • Tortilla chips

Putting it all together: 

  • Cook the chicken and then shred into a bowl with a fork (if you bought already cooked rotisserie chicken, shred it into bowl
  • Preheat oven to 350
  • Chop up your onion
  • Add onion & chicken to pan with some olive oil
  • Cook onion & chicken on medium for about 5 minutes, until the onions are soft
  • Add in half of the Enchilada sauce and stir around
  • Mix in the beans and green chili’s to the mixture, let heat up for a couple minutes
  • Add in a spoon of sour cream & handful of cheese
  • Mix all together

Now the Enchilada:

  • Get an 11×7 pan and spray with non stick cooking spray
  • Place around 4 tortillas on the bottom of the pan (however many it takes to cover the pan. I will sometimes tear apart one tortilla to cover the edges of the pan).
  • Drizzle some enchilada sauce on top of them & sprinkle some cheese
  • Layer with chicken mixture
  • Cover the chicken mixture with tortillas & rest of enchilada sauce
  • Place the rest of the  chicken mixture on top of the second layer of tortillas
  • Cover the layer with cheese (when making this I only had mozzarella cheese but it still works)
  • Take your tortilla chips and sprinkle on top of the cheese; sprinkle how ever much your heart desires
  • Place in oven and bake for 30 minutes
  • Serve with avocado or sour cream on top
